WHere is an easy take on a drink found on our latest cocktail list. It's a batch prepared mix that is bursting full of flavours of the Christmas time, rendering it perfect for a celebration. Reserve the remaining citrus syrup to use in morning drinks, desserts, or to mix another batch of this cocktail.
The Bikini Cocktail
Makes enough for 10 guests
Ingredients for the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
For the Cocktail (yields 850ml, to serve 10)
400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing
Method
For the Syrup: Put the listed components in a pan, bring to a light boil, agitating so the sugar melts. Next, turn off the burner and let it to cool down fully. Transfer into a sealable bottle, close it keeping it in the fridge, it will last for around a month.
To make Batch Mix: Mix every liquids into one big jug, leave to sit for one hour, then pass it through best through a fine cloth, so it's fully clarified.
When ready to serve: Pour 85ml of the cocktail base into your mixing glass packed with ice, gently stirring carefully for one minute to cool it down. Strain into an frosted cocktail glass or equivalent, garnish with the cranberries adding the final touch by giving it a brief mist of mandarin oil over the top.
